Abstract

STUDI USAHA PENGOLAHAN BUAH SALAK (Salacca zallaca) MENJADI COKLAT SALAK DAN KOPI BIJI SALAK PADA HOME INDUSTRY PUSANA GUGAR DI KELURAHAN DEMPO MAKMUR KOTA PAGAR ALAM MUHAMMAD IBNU SAID ¹ʼ, HARNIATUN ISWARINI, SP., M.Si ²ʼ, MUHAMMAD SIDIK, SP., M.Si ²ʼ ¹ʼ Mahasiswa Program Studi Agribisnis, ²ʼ Dosen Program Studi Agribisnis ABSTRAK Indonesia adalah negara agraris, sehingga sektor pertanian merupakan sektor yang penting dalam struktur perekonomian Indonesia termasuk dalam menciptakan kemandirian keuangan. Salah satu subsektor dari pertanian yang memberikan kontirbusi adalah subsektor hortikultura, dimana pembangunan pertanian harus dipandang dari dua pilar secara terintegrasi yaitu pilar pertanian primer meliputi kegiatan usahatani dan pilar pertanian sekunder meliputi kegiatan agroindustri (usaha pengolahan). Jadi penelitian ini bertujuan untuk mengetahui proses pengolahan buah salak, mengetahui sistem penjualan hasil dari pengolahan buah salak serta mengetahui berapa besar keuntungan usaha pengolahan buah salak (Salacca zallaca) menjadi coklat salak dan kopi biji salak pada Home Industry Pusana Gugar di Kelurahan Dempo Makmur Kota Pagar Alam. Metode pengumpulan data yang digunakan adalah metode observasi dan wawancara langsung dengan responden dan teknik pengambilan contoh yaitu Purposive Sampling. Dengan hasil penelitian sebagai berikut : pengolahan buah salak menjadi coklat salak dan kopi biji salak meliputi beberapa tahap yaitu mulai dari tahapan persiapan alat, penyortiran, pengelompokan bahan baku, penggilingan, penyangraian, penambahan baku lain, pengemasan dan labeling. Sedangkan sistem penjualan meliputi sistem penjualan E-Commerce, Direct Selling, dan Konsinyasi. Untuk keuntungan yang didapatkan dari hasil pengolahan buah salak yaitu daging buah salak menjadi coklat salak sebesar Rp.10.217.921,68 sedangkan keuntungan yang didapatkan dari hasil pengolahan biji buah salak menjadi kopi biji salak sebesar Rp.1.219.291 artinya usaha pengolahan buah salak tersebut pada Home Industry Pusana Gugar menguntungkan. Kata Kunci : Proses pengolahan, Sistem penjualan, Keuntungan, Home Industry Pusana Gugar, Coklat salak dan Kopi Biji Salak ABSTRACT Indonesia is an agricultural country, therefore the agricultural sector is an important sector in the structure of the Indonesian economy, including in creating financial independence. One sub-sector of agriculture that provides construction is the horticulture sub-sector, where agricultural development must be viewed from two pillars in an integrated manner, namely the pillars of primary agriculture including farming activities and secondary agricultural pillars covering agro-industrial activities (processing business). So this study aims to determine the processing of Salak fruit, find out the sales system of the processing of Snake fruit and find out how much profit from business of processing Snake fruit (Salacca zallaca) into cokelat salak and salak coffee in the Home Industry Pusana Gugar in Dempo Makmur, Pagar Alam city. The data collection method used observation method and direct interview with respondents and the sampling method was Purposive Sampling. With the results of the study as follows: the processing of Snake fruits into cokelat Salak and kopi biji salak includes several stages, starting from the stages of preparing tools, sorting, grouping of raw materials, milling, roasting, adding the other raw material , packaging and labeling. While the sales system includes the E-Commerce, Direct Selling, and Consignment sales systems. For the benefits obtained from the processing of Snake fruits, namely cokelat salak amounts up to Rp.10,217,921.68, while the benefits obtained from the results of processing Salak seeds into kopi biji salak amounts up to Rp.1,219,291, which means that the Salak processing business at Gugar Pusana Home Industry is profitable.
