Abstract

Cilok merupakan jajanan tradisional yang banyak dikonsumsi oleh masyarakat karena teksturnya yang kenyal, harga yang terjangkau, dan cita rasa yang khas. Tingginya minat konsumsi cilok menimbulkan kekhawatiran terhadap aspek keamanan pangan, khususnya terkait penggunaan bahan tambahan pangan berbahaya seperti boraks. Berdasarkan Peraturan Kementerian Kesehatan Republik Indonesia Tahun 2012, boraks dilarang penggunaannya dalam makanan karena berpotensi menimbulkan dampak buruk bagi kesehatan. Meskipun demikian, boraks masih ditemukan pada berbagai produk pangan, termasuk jajanan tradisional. Penelitian ini bertujuan untuk mengidentifikasi ciri fisik jajanan cilok yang mengandung boraks serta menentukan kadar boraks secara kuantitatif menggunakan metode spektrofotometri UV-Vis. Penelitian ini merupakan penelitian deskriptif kuantitatif. Pengambilan sampel dilakukan dengan teknik accidental sampling terhadap sepuluh sampel cilok yang dijual oleh pedagang kaki lima di sekitar sekolah wilayah Seberang Ulu II Kota Palembang. Analisis dilakukan terhadap karakteristik fisik berupa warna, aroma, dan tekstur, serta penetapan kadar boraks secara kuantitatif. Hasil penelitian menunjukkan bahwa seluruh sampel memiliki variasi ciri fisik dan seluruhnya terdeteksi positif mengandung boraks dengan kadar berkisar antara 1,42 μg/ml hingga 28,09 μg/ml. Kesimpulan penelitian ini menunjukkan bahwa boraks masih ditemukan pada jajanan cilok di Kota Palembang. Temuan ini mengindikasikan bahwa pengawasan keamanan pangan oleh instansi terkait seperti BPOM dan Dinas Kesehatan belum sepenuhnya efektif. Oleh karena itu, diperlukan penguatan pengawasan, penegakan regulasi terkait peredaran boraks, serta peningkatan edukasi kepada masyarakat, khususnya sekolah dan orang tua, mengenai pentingnya memilih jajanan yang aman dan sehat. Cilok is a traditional Indonesian street food widely consumed due to its chewy texture, affordable price, and distinctive taste. However, the high consumption rate raises concerns regarding food safety, particularly the use of hazardous food additives such as borax. According to the 2012 Regulation of the Indonesian Ministry of Health, borax is strictly prohibited in food products due to its potential adverse health effects. Nevertheless, borax is still found in various food items, including traditional snacks. This study aimed to identify the physical characteristics of cilok containing borax and to quantitatively determine borax levels using UV-Visible spectrophotometry. This study employed a descriptive quantitative research design. Samples were collected using accidental sampling techniques from ten cilok vendors operating around schools in the Seberang Ulu II area of Palembang City. Physical characteristics, including color, aroma, and texture, were evaluated, followed by quantitative analysis of borax content. The results showed that all samples exhibited varying physical characteristics and tested positive for borax, with concentration levels ranging from 1.42 μg/ml to 28.09 μg/ml. In conclusion, borax was detected in all cilok samples analyzed in Palembang City. These findings indicate that food safety monitoring conducted by relevant authorities, such as the National Agency of Drug and Food Control and local Health Offices, has not been fully effective. Strengthening regulatory enforcement, improving surveillance systems, and enhancing public education particularly targeting schools and parents are essential to ensure the safety of street food and protect public health.
