Abstract

ABSTRAK PERANCANGAN ALAT PEMOTONG TAHU MENGGUNAKAN METODE QUALITY FUNCTION DEPLOYMENT (QFD) (Studi Kasus UMKM Tahu Tempe Barokah) Muhammad Razqi Saleh Akbar Teknik Industri Universitas Muhammadiyah Palembang E-mail: razkyakbr@gmail.com UMKM Tahu Tempe Barokah merupakan industri tahu dan tempe yang bergerak dalam pembuatan tahu dan tempe yang berada di kota Palembang. Salah satu proses dalam pembuatan tahu adalah pemotongan, pada proses pemotongan tahu UMKM Tahu Tempe Barokah ini masih menggunakan alat tradisional yaitu pisau dan penggaris kayu yang mana alat tersebut memerlukan banyak gerakan berulang pada saat memotong tahu dan ukuran tahu yang dihasilkan terkadang tidak sesuai dengan ukuran yang telah ditetapkan. Berdasarkan permasalahan tersebut dapat diatasi dengan merancang alat pemotong tahu, yang mana perancangan tersebut bertujuan untuk membantu mempercepat proses pemotongan dan mengurangi gerakan berulang saat memotong. Dengan menerapkan metode Quality Function Deployment penulis merancang dan membuat alat berdasarkan spesifikasi produk yang diinginkan konsumen. Setelah alat selesai dibuat selanjutnya alat dilakukan uji coba dan didapatkan perbandingan waktu antara memotong tahu dengan menggunakan alat tradisional dan menggunakan alat rancangan. Pada pemotongan menggunakan alat tradisional didapatkan waktu rata – rata sebesar 18,2 detik sedangkan menggunakan rancangan alat didapatkan waktu rata -rata sebesar 8,3 detik sehingga hasil dari menggunakan rancangan alat dapat menghemat waktu sebesar 9,9 detik. One of the processes in making tofu is cutting, in the process of cutting tofu at UMKM Tahu Tempe Barokah still using traditional tools, namely knives and wooden rulers. This traditional tools require a lot of repetitive movements when cutting tofu and the size of the tofu produced is sometimes not in accordance with the predetermined size. Based on these problems, the aims of this study is to overcome it by designing a tofu cutting tool. It is designed to help speed up the cutting process and reduce repetitive movements when cutting. By applying the Quality Function Deployment method, tofu cutting tools is the develop based on the product specifications desired by consumers. After the manufacturing process is completed it undergoes testing to compare cutting tofu using traditional tools and using the design tool. In cutting using traditional tools, an average time of 18.2 seconds is obtained while using the tool design, an average time of 8.3 seconds is obtained, the result of using the tool design can save time by 9.9 seconds.
