Abstract

ABSTRAK PENGARUH SACCHAROMYCES CEREVISIAE TERHADAP KADAR ETANOL DARI KULIT NANAS SECARA FERMENTASI Intan Seprina Anugrah, 43 Halaman, 3 Tabel, 6 Gambar, 4 Lampiran Indonesia sebagai negara yang kaya dengan sumber daya alam memiliki kesempatan yang luas untuk pengembangan etanol untuk menggantikan sumber energi fosil yang semakin sedikit. Saat ini sudah mulai diproduksi bioethanol dari berbagai bahan baku seperti ampas tebu, singkong, kentang dan sebagainya. Pemerintah juga sudah memperkuat pengembangan bioethanol ini dengan Peraturan Presiden Republik Indonesia Nomor 5 Tahun 2006 tentang Kebijakan Energi Nasional untuk mengembangkan sumber energi alternatif sebagai pengganti BBM.Bioetanol dapat diproduksi melalui proses fermentasi dari tanaman penghasil karbohidrat dan gula. Salah satu bahan baku yang dapat digunakan untuk pembuatan bioetanol ini adalah kulit nanas. Penelitian ini dilakukan untuk mengetahui pengaruh Saccharomyces Cerevisiae terhadap kadar etanol. Pada penelitian ini menggunakan tahapan fermentasi selama 7 hari dan 14 hari, distilasi untuk mendapatkan etanol dengan suhu 80℃ selama 60 menit serta hidrolisis dengan asam sulfat 75% sebanyak 14 ml suhu 120℃ dan lama pemanasan selama 45 menit. Ekstrak kulit nanas dibagi pada labu erlenmyer masing-masing 200ml diberi Saccharomyces Cerevisiae sebanyak 4gram, 8gram, 10gram, 11gram dan 12gram. Dari penelitian didapatkan 10gram Saccharomyces Cerevisiae lama fermentasi 7 hari memiliki kadar etanol paling tinggi dari variasi yang lain, yaitu sebesar 3,7778%. Kata Kunci : Kulit Nanas, Saccharomyce Cerevisiae, Fermentasi, Etanol, Distilasi ABSTRACT THE EFFECT OF SACCHAROMYCES CEREVISIAE ON ETHANOL LEVELS FROM FERMENTATION OF PINEAPPLE PEEL Intan Seprina Anugrah, 43 Pages, 3 Tables, 6 Pictures, 4 Attachments Indonesia as a country rich in natural resources has ample opportunity for the development of ethanol to replace fewer fossil energy sources. Currently, bioethanol has begun to be produced from various raw materials such as bagasse, cassava, potatoes and so on. The government has also strengthened the development of bioethanol with Presidential Regulation of the Republic of Indonesia Number 5 of 2006 concerning National Energy Policy to develop alternative energy sources as a substitute for fuel. Bioethanol can be produced through a fermentation process from plants that produce carbohydrates and sugar. One of the raw materials that can be used for the manufacture of bioethanol is pineapple peel. This research was knowing the effect of Saccharomyces Cerevisiae on the ethanol content. In this study, the stages of fermentation for 7 days and 14 days, distillation to obtain ethanol at a temperature of 80℃ for 60 minutes and hydrolysis with 75% sulfuric acid as much as 14 ml at 120℃ and heating time for 45 minutes. Pineapple peel extract was divided into 200 ml Erlenmyer flasks each given Saccharomyces Cerevisiae as much as 4 grams, 8 grams, 10 grams, 11 grams and 12 grams. From the research, it was found that 10 grams of Saccharomyces Cerevisiae with 7 days of fermentation had the highest ethanol content of the other variations, which was 3.7778%.
